Recipe Ideas
A lot of these recipes I've taken from various sites on the 'web. I don't really cook/bake using recipes usually, but it's good to know roughly how much of each ingredient I should be eyeballing.
So, this page is mostly a reference for myself. I'll try to include the inspiration links if applicable.
Banana Bread
Makes one big loaf, a dozen muffins, or a bundt pan or two. Again, this is all eyeball measuring!
2 cups AP flour
1/3 cup sugar
Baking powder and baking soda
Salt, cinnamon, whatever other spices
2-5 ripe bananas. Do not over-mash!
Some acid to react with the baking soda. Lemon or Apple Cider Vinegar.
1/2 cup of oil
Chocolate chips, walnuts, whatever other add-ins
Turbinado sugar on top
Chickpea Fesenjan
Persian Pomegranate-Walnut Stew. I think I saw this in some cookbook many years ago.
Serve over rice with plenty of pomegranate arils.
1 can of chickpeas, rinsed
1 onion (powdered, if your partner doesn't like onions)
8 oz. bottle of pomegranate juice with a teaspoon of Better than Bouillon paste (why simmer the juice down just to add water to make stock?)
Squirt of agave nectar or spoonful of sugar
Spices: cinnamon, black pepper, turmeric
A cup or two of walnuts, toasted in the oven and then blended into a meal
Drizzle of olive oil
"Everything" Cobbler
Just about any fruit will do for this cobbler... Apples, mixed berries, etc. Dessert for two, served in mini cocettes.
For the filling:
Measure out your fruit to fill the baking dish(es). They will shrink so fill it up.
Lemon juice
Sprinkling of sugar. Spices if desired (apple pie anyone?)
Cornstarch. The more cornstarch you add, the thicker.
For the cobbler topping:
1/4 cup (vegan) butter
2 Tbsp sugar
1 cup flour
Baking soda + baking powder
1/3 cup milk of choice
Tablespoon of acid: lemon juice or Apple Cider Vinegar
Turbinado sugar on top
